One of my favorite things about summer is hanging out on the patio, cocktail in hand, spending time with family and friends.  Growing up Scottish, I'm a firm believer in cocktail hour!  My favorite cocktails are simple and refreshing and typically involve either vodka or tequila on the rocks with soda water.  There's one drink in particular you can usually find me sipping on pool side or at brunch.  The Chilton.  If you have never heard of a Chilton, it probably just means you are not from West Texas.  And the West Texas I am referring to is the Texas Panhandle and not the El Paso region.  Even when I go to Dallas and order a Chilton forgetting where I am, I'm having to give notes to the bartender because the waiter is usually looking at me like I'm speaking a foreign language.

 

 

Legend has it that the Chilton was a request of Dr. Chilton at a country club in Lubbock, Texas.  He ordered a vodka on the rocks with the juice of two lemons and topped with soda water.  This isn't your typical vodka and soda, my friends.  THIS is a magical experience in a glass. 

 

The great thing about the Chilton is that it can take on many flavors and variation.  Some of my

favorite versions are cucumber, green chile and prickly pear.  Have I peaked your interest yet?

 

One way to jazz up summer cocktails is to use popsicles as swizzle sticks, especially the all fruit ones!  I love how the flavors come together!  As we were getting ready for the 4th of July this past week, came up with a special Chilton just for the occasion! What's more iconic than a Bomb Pop?! The cherry, raspberry and lime flavors mixed with the lemony tang of the Chilton will have you asking for more!

 

 

  

The Bomb Pop Chilton 

 

Ingredients

- Crushed Ice

- 1 1/2 oz Vodka (I prefer Titos or Western Son)

- Juice of 2 lemons

- Soda (I recommend Topo Chico to fully make it a Texas delight!)

- Salt for rim (optional)

 

The How-To

Use a highball or larger cocktail glass.  Salt the rim if you desire (I do recommend it!).  Pour vodka and lemon juice over crushed ice. Fill the glass with soda water.  Garnish with Bomb Pop and a festive straw! 

 

 

This is something you could EASILY make into a kid friendly version!  Simply use either sparkling lemonade or Sprite!  You could also use plain soda water and add frozen berries to the bottom or some Pop-Rocks!
